Iced Gingerbread

This holiday favorite is delicious and easy to make. We highly recommend Thelma’s recipe below:

GINGERBREAD INGREDIENTS

  • 2 cups sifted all-purpose flour
  • ½ cup sugar
  • 1 tsp salt ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cloves
  • 1½ tsp cinnamon
  • 1½ tsp ground ginger
  • ½ cup melted butter
  • 1 cup molasses
  • 1 egg ½ cup buttermilk
  • ¼ cup hot water

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Sift together flour, sugar, salt, baking powder, baking soda and spices. Stir in melted butter, molasses, egg and buttermilk. Beat in hot water. Pour batter into generously greased and floured 8-inch square pan. Bake for 45-50 minutes, until cake springs back when lightly touched with finger. Serve Gingerbread with butter icing.    

BUTTER ICING INGREDIENTS

  • 3 cups powdered sugar
  • ½ cup butter (room temp)
  • 4 tbsp cream
  • 2 tsp vanilla

DIRECTIONS

Sift powdered sugar. Stir in butter until smooth. Mix cream and vanilla together, then add to powdered sugar and butter mixture. Stir until smooth. Spread over Gingerbread.
