Leftover Cereal Cookies
- 1¼ cups flour
- 1 tsp baking powder
- pinch of salt
- ½ cup butter (softened)
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups crushed cereal
- Optional: chopped walnuts, almonds, dried cranberries or coconut flakes
Preheat oven to 350° F. Combine flour, baking powder and salt in a bowl. In another bowl, cream butter and sugars until fluffy. Beat in egg and vanilla. Slowly add the dry ingredients until mixed well. Stir in cereal and optional ingredients. Drop tablespoonfuls of batter onto greased cookie sheets and bake for 10-12 minutes. Makes 1½-2 dozen cookies. Bake for about 15 minutes. Makes 1½-2 dozen yummy cookies.
*Add ¼ cup more sugar if using cereal low in sugar.
*Experiment with using multiple types of cereal.
*Use all the little bits at the bottom of the cereal bag.
